Manzoni Bianco is a grape variety born from the research of Professor Manzoni of the Conegliano Enology School in the 1930s. A cross between Riesling Renano and Pinot Bianco that develops extreme minerality, freshness, and longevity.
Ermenegildo Giusti dedicated this wine to Gabriele, his nephew and the winery's enologist, depicting on the label a woodcock, a local bird species, taking flight towards new horizons.
The grapes are harvested at the foot of the Abbey of Sant'Eustachio, in the estate of the same name.
Sensory profile
In appearance, it is straw yellow with golden highlights, of promising consistency and elegance.
On the nose, it is intense and complex with a wide opening on fruity and vegetal notes: citron peel, mango, fresh almonds. Perceptions of aromatic herbs such as nettle and oregano follow, closing with mineral notes of chalk and sand.
On the palate, it reveals a great balance between softness and sapidity.
Of good structure and elegantly persistent with an alternation between fruit, flowers, and aromatic herbs that give rise to a pleasant drink.
The finish is almond-like on a mineral background. Fully harmonious.
Pairings
It pairs well with cooked crustaceans and mollusks. Excellent with asparagus risotto, San Daniele prosciutto, and fresh, buttery cheeses.
