Recantina is a unique grape variety that produces wines with a bold character, yet at the same time elegant and distinctly fresh. To enhance these qualities, Giusti Wine chose to produce this wine in amphorae and explore all the potential of this grape.
Production process
The grapes, coming from selected vineyards, are harvested exclusively by hand to select the best bunches. In the cellar, destemming takes place, followed by the transfer into amphorae where fermentation occurs with natural yeasts. The wine rests in the amphora from this moment until the first decade of April, when racking and subsequent transfer take place.
The wine returns to the amphora until bottling, which takes place after about six months. This is followed by aging in the bottle for 12 months.
Sensory profile
It is a wine of impeccable clarity, with pleasant transparency. It is ruby red, “bright” with delicate garnet reflections and expresses excellent consistency.
On the nose, it releases pleasant and intense perceptions of red fruit, including sour cherries, blackcurrants, and dried plums, with nuances of blackberries and tamarindo. These are followed by aromas of red rose, balsamic notes such as eucalyptus, and finally herbal scents such as fig leaves and fresh tobacco. The attack on the palate is dry, savory, and tannic with a decidedly upright body; then the sip opens up and widens towards pleasantly warm perceptions, which come alongside the tannins giving a long-lasting perception, resting on a solid savory finish.
Pairings
Braised or charcoal-grilled red meats; game fillet with a blueberry sauce, duck breast with aromatic herbs, aged cow’s milk cheeses.
