The name is a tribute to Nonno Umberto, an important figure and source of inspiration in the history of Ermenegildo Giusti. For this masterpiece, only the finest Cabernet Sauvignon and Merlot grapes from the gentle slopes surrounding the Abbey of Sant’Eustachio are used.
Our finest Bordeaux blend, the most important of our family.
Sensory profile
It presents with impeccable clarity, with vibrant ruby-red hues and garnet reflections. Excellent transparency and consistency. On the first sniff, it is complex with notes of sour cherry, blackcurrant, blueberry, and dried red plum. It continues with elegant toasted notes such as coffee beans, vanilla pods, and cocoa powder, finally concluding with delicate notes of fine leather and balsamic hints of eucalyptus and licorice.
The entry on the palate is immediately excellently balanced between generous warm and soft perceptions and the savory components on firm, well-polished, and caressing tannins. The body is rich; the finish is long and persistent, and on the retro-olfactory it evokes aromas of blackcurrant and violet accompanied by subtle notes of licorice.
Pairings
It is a wine for large, highly succulent red meat dishes, grilled or braised. It also pairs well with pappardelle with game ragout, but is also ideal with aged cow's milk cheeses.
Serving temperature
